Wine and food pairing can be daunting. It doesn't have to be.
Last spring when I attended the 2012 Pork Summit in Napa Valley (on behalf of the National Pork Board), I had the privilege to meet Chef Bill Briwa, an instructor at the Culinary Institute of America at Greystone. Chef Briwa is a charismatic and passionate teacher who taught us about braising meats and food and wine pairing. In this video, he shares a couple of his favorite tips for pairing wine with food (especially pork).
He even tells you about two wines that “want to be helpful at the table” and are ideal for holiday dinners. Can you guess what they are?
