    6 Pork Burger Patties
    2 egg yolks
    2 tablespoons steak sauce
    1 1/2 teaspoons salt
    2 teaspoons black pepper
    3 tablespoons cold, unsalted butter

1 pound red onions, cut in 1/4-inch rings
2 to 3 tablespoons extra virgin olive oil
    black pepper, to taste
    salt, to taste
    2 tablespoons balsamic vinegar

    1 cup ketchup
1 to 2 teaspoons canned chipotle peppers, seeded and diced, or to taste
1 to 2 tablespoons adobo sauce from can
    2 teaspoons balsamic vinegar
salt & black pepper, to taste

    6 Roma tomatoes
    Olive oil
salt & black pepper, to taste

6 Brioche Rolls or hamburger buns
    6 sharp cheddar cheese slices
    2 cups baby arugula leaves
    1 ripe avocado

To caramelize the onions, heat oil over low heat in a large skillet. Add the onions and cook, stirring frequently, for 20 minutes or until soft and deep golden brown. Don’t rush this part. This is really important as it takes about 20 minutes to develop the sugars and caramelize the onions… it will be well worth the wait! Season with salt and pepper and add the balsamic vinegar during the last couple of minutes. Can be made a couple of days ahead but remember to cover and chill.

Preheat the oven to 400 degrees.

Slice the tomatoes in half lengthwise and remove the seeds. Spread tomato halves on a sheet pan and drizzle with olive oil. Season generously with salt and pepper and toss together to ensure everything is coated evenly. Roast for 45 minutes, cut side up, until the tomatoes are concentrated and caramelized. These can also be made a couple of days beforehand just remember to cover and chill.

To make the ketchup, Stir together the ketchup, chipotle peppers and adobo sauce in a small bowl. Whisk in the vinegar and season with salt and pepper. Again, this can be a make ahead ingredient.

To make the burgers, whisk together the egg yolks, steak sauce and salt and pepper in a large bowl. Add the patties and coat. Carefully work the meat with your fingertips until just combined. Reform patties, shape a loose ball in your hand and press half a tablespoon of the cold butter into the center of the meat. Lightly form each hamburger with the balls of your hands making sure the butter is entirely encased, but don’t pack the meat. The burgers should be half an inch thick. Season both sides of the burgers with salt and pepper.

Heat an outdoor grill or indoor grill pan to medium-high.

Grill the burgers for 5 to 7 minutes on each side. Remove to a plate, add cheese and cover with aluminum foil. Allow the burgers to rest for 5 minutes and serve immediately on buns with desired toppings.

took a can of corn, peas, and carrots and put them in the sauted onions. Then I took the meat and cut it up into little bits and put it into the pan with the vegis. 69. Sausage Patties Burgers Parmagiana

    1 cup spaghetti sauce(any brand)
    1 cup mozarrella cheese
    1/4 cup parmesan cheese
Brown patties in a skillet on the stove for 10 minutes, then pour spaghetti sauce over patties. Simmer covered in skillet on medium low for 20 minutes. Sprinkle cheeses on top of patties. Cover skillet and allow to melt for several minutes. Serve over spaghetti.

  70. 1lb ground pork
1 tbs mild Jamaican jerk sauce
1 half onion grated or finely chopped
    4 pinches ground coriander
    4 pinches paprika powder
A dash of fresh ground black pepper
    A pinch of salt
    A tablespoon of Worcestershire sauce
    1 egg lightly beaten

First, mix all the ingredients in a bowl and using your hands, shape into four balls. Turn the heat to medium under the skillet and add a tiny amount of oil. When the skillet is hot, add the burgers, pushing them flat with a spatula. Cook for about 3 minutes each side for medium rare, longer for well done and less for rare.

Just before the burgers are ready, toast the inside of the buns under a broiler or over a grill or in a toaster. If using a grill or broiler, spread a little butter on the buns first. My personal preference for serving them is a little mango relish on the bottom of the bun, then the burger with a thin slice of raw onion, a lettuce leaf and a slice of tomato. Topped off with a dap of ketchup and a good helping of English mustard on the top half of the bread. But, the great thing about making home made hamburgers is, you can add what you want. I like to serve them with homemade French fries.

  71. Burger:
    1 lb ground pork
    2 lbs ground chuck
    1/2 cup Worcestershire sauce
pinch or two of steak seasoning

    Basting sauce
1/4 cup Worcestershire sauce and pinch or two of steak seasoning.

Preheat grill. Combine all ingredients and mix. Shape into patties. You should get about 8 good size patties (.35 to .40 lbs each). Place patties onto grill and brush basting sauce of Worcestershire sauce and steak seasoning. Flip after 4 to 5 minutes then brush again. After another 3 to 5 minutes (depending on grill) remove from grill and let rest.
Because the burger is so simple, you can top with anything. I prefer slathering on mayo and bbq sauce plus lettuce, onions, and pickles.

  72. Pure Country Pork on a Bun
    3lb Ground Pork
1 Package Kings Hawaiian Mini Sub Rolls
Pepper and Salt to taste (I like to sprinkle all over in a bowl)
Adolf’s Meat Tenderizer sprinkled just like salt and pepper
    Mix together using your hands
Patty meat to size of bun (pork will not shrink like beef)
Place on grill keeping flame medium to low (Meat should be flipped couple of times and done in approx. 20 minutes. If I patted a little thick I just take a knife and cut into the middle -no pink, it’s done.
Cover with Land of Lakes Olive Oil Butter (both sides) let char just a bit.

Buns – (I use Kings Hawaiian Mini Sub Rolls)
Wrap in heavy Duty Foil after misted with water, put on grill about 10 minutes before burgers done. Careful not to burn.

  74. Mild Italian sausage, garlic infused olive oil, sandwich size pepperoni, hard salami, prosciutto, red onion, roma tomatoe, arugula, smoked mozzarell cheese, compound butter or fresh garlic & parsley and a drizzle of balsamic vineger & oil all on a ciabatta roll. Salt & pepper to taste. You can eiher grill the burger inside on the stove in a grill pan or go outside and cook it on the grill. First step would be to take a patty out and place it on the grill. While that is cooking I would cut down my red onion, take the garlic infused olive oil brush it on the inside part of the ciabatta roll to grill it for some nice grill marks. I would also put a small fry pan on the grill to get it hot to fry the pepperoni, prosciutto & salami. When the sausage is almost done I put a pat of compound butter on the sausage & then I put the other meats on top of the sausage patty and then top it off with the smoked mozzarella cheese. Once the cheese is melted I would place the burger on the grilled ciabatta roll top it off with red onion, arugula & roma tomatoe. The last step would be to put the balsamic drizzle on the very top of the burger then place the top of the ciabatta roll on the burger and proceed to enjoy the burger.

  182. I submitted my recipie
2 lbs. lean ground turkey or beef
    1/2 c. chopped onion
    1/2 c. chopped bell pepper
    1 clove garlic finely chopped
    1 1/2 tsp salt
    1 tblsp. olive oil
1 package whole wheat crackers (about 20)
    1 egg

Saute bell pepper, garlic, onion, and salt in oil. Set aside. Combine meat, crackers, and egg and then add in onion mixture. Make into patties and cook until brown. YUMMY!

  183. Brown Sugar Burgers

    brown sugar burgers
1 lb. very lean (97% lean or better) ground beef
½ cup brown sugar (1/4 cup if less sweetness desired)
1 tablespoon honey or spicy honey mustard
    maple or honey bbq sauce
    sharp cheddar cheese
real hickory or maple cured bacon
    hamburger buns
Mix brown sugar into beef with your hands, gently folding it to ensure complete mixture. Repeat with the mustard. I have found that trying to mix the sugar and the mustard at the same time creates clumps in the beef that inhibit complete mixture.
Once the mixture is complete, separate into four equal sized balls. Gently pat out the balls into large patties, being sure to keep the center of the burgers a little thinner than the outer edges. This will keep the burgers from shrinking when you cook them.

After the burgers are cooked (I prefer the open grill, but this will also work on a standard skillet or Foreman Grill), build them in the following manner for best flavor mixture:

    1. Bottom bun
    2. Burger
    3. Cheese (you can put this on the burgers while they’re still on the grill if you want it a little melted)
    4. Two strips of bacon (either in an ‘X’ or broken up and layed beside each other to cover the whole burger)
    5. BBQ sauce
    6. Other toppings as desired (tomato, lettuce (shredded works better), onions, etc.
    7. Top bun

In a bowl mix all the above ingredients except for bacon, cheese and the patties. Once you’ve dont that put the patties in the bowl so they will get the sauce and seasoning on them. Let them marinate for about 30 minutes in fridge. While their marinating get grill ready ( I have cooked these on George Forman as well). Cook for 3-5 minutes on each side then add cheese and then add bacon so bacon kind of melts to cheese. Super YUMMY!

1 large can of crushed tomates
    1 small can tomato paste
    1 carrot
    1 small red onion
1 head of garlic (you will use 3 cloves)
    1 tablespoon white sugar
basil (you can omit if you do not like basil)
    1/4 pound of panchetta
1 box of Johnsonville italian sausage patties
1 box of no boil lasagna noodles
1 16 oz container of ricotta cheese (i use low fat)
1 16 oz container of cottage cheese (i use small curd lowfat)
1 bag of shredded italian blend cheeses
1 bag of shredded parmesan cheese
    Parsley (fresh or flaked)
    1 egg
1 bag of shredded mozzarella cheese
1 bag of shredded cheddar cheese

Peel and dice the carrot, dice the onion, the 3 cloves of garlic and the panchetta. Coat the bottom of a large pot or small dutch oven with olive oil, add the carrots and onions, saute until softened – add the panchetta and saute until cooked. Add the diced garlic, crushed tomates, tomato paste (and one canful of the tomato paste can filled with water) and the sugar. This is also when you would add the basil if you like. Add the sausage patties, and let the sauce simmer for 30-45 minutes while finishing your other prep work.

In a medium bowl combine the ricotta, cottage cheese, egg, one handful of the shredded italian blend cheese, 1 handful of the shredded parmesan and parsley to your liking. Stir well and set aside.

Coat the bottom and sides of a 13×9 pan with non-stick cooking spray, and assemble your noodles, sauce, cheese mixture, parsley and shredded cheeses to begin layering.

Start by covering the bottom of the pan with sauce only (no sausage patties) – then layer four no boil lasagna noodles covering as much of the bottom of the pan as possible. Add another layer of sauce, this time include two sausage patties. Add of layer of the creamed cheese mixture, then shredded cheeses using a ratio of about 4:1 for the italian/cheddar. Continue layering (staggering the placement of the sausage patties) until you have completed three layers (you should have used all your sausage patties within these layers). For the top layer, use four no boil lasagna noodles, followed by the remaining sauce and then cover the top with the shredded cheeses, finally sprinkle the top with parsley for color.

Heat your oven to 350 degrees. Cover your pan with foil and bake for 50 minutes. After 50 minutes remove the foil and continue baking until the cheese is browned and gooey. Let rest 15 minutes before serving.

Box of Johnsonville Bratwurst Patties (thawed)
    Barbeque sauce
    Large Onion sliced thin
3 Large Peppers sliced thin (one red for color)
    2 Tablespoons oil
    Tomato sliced thin
    1) Saute the sliced onions and peppers all together in the oil until they are tender. We put these on before we begin to barbque so that they have a good, long time to cook.

    2) Barbque the patties whatever method you like. We use old fashioned charcoal. When they are cooked thoroughly, add barbeque sauce generously to both sides.

    3) Serve the patties on a lightly toasted hamburger bun and top with onion and pepper mixture and top with lettuce, tomato slice and mustard.
    4) Enjoy one tasty burger!

  262. Mint Sauce Burger

    For The Patties:
1 lb coarsely ground lamb or mutton

    1 half onion finely chopped

    1/2 clove garlic finely chopped

    2 pinches ground coriander

a little pepper, fresh ground is better

    A little salt

    1 hand fresh bread crumbs

    1 egg beaten

1 quarter mutton bouillon/stock cube dissolved in 2 to 3 tablespoons water

    For the Mint Sauce:
    3 tablespoons water

1 hand fresh mint finely chopped

1 tablespoon sugar, castor is better

    3 tablespoons cider vinegar

    1 pinch salt

We’ll make the mint sauce first. Bring the water to the boil and stir in the mint. Remove from heat source and add the sugar and salt, stir through and let it cool before stirring in the vinegar.

Mix all the patty ingredients thoroughly, leaving the salt for after the patties are cooked if you prefer (how to season meat).
Make sure the mixture is cool. Divide mixture into 4 equal balls and mold into patties (how to mold patties).

Cook on medium heat under the grill, on the barbecue or in a pan until the patty is cooked to your preferred degree of doneness or the internal temp reaches 160F/70C.

Split the rolls and toast the cut surfaces lightly just before the patties are done. 278. Ay Caramba Burger!!
    cut onion into small slices.
carmalize onions in some olive oil and a pat of butter
while this is cooking, slice your cheese into squares
the size that will fit into the palm of your hands.
You want some thickness to the slices. Now, divide up your meat
into DOUBLE the amount of patties you want to make. Make the patties, which
will be a bit on the thin side. Onions should be ready now. Place a square of cheese in center of one pattie, then some onions on top, finally cover with another pattie on top, sealing the edges with your fingers. Place pattie on grill and cook 4-6 min on each side. Depending on desired medium, well done, etc. Once cooked, enjoy with all the fixins and on first bite, you’re sure to say, AY, Caramba!! This recipe works well with store bought patties like Johnsonville sausage patties. The cheese and onions can be placed on top of the pattie once it is cooked and looks gorgeous for presentation!!

  280. Carpetbagger Burger

    For the Patties:
    4 Basic Hamburger patties

    For the Filling:
4 rashers bacon fried crispy, crumbled and drained on a paper towel

1 cup fresh oysters, drained and coarsely chopped. If unavailable canned (not smoked) will do

    1/2 cup chopped mushrooms

    1 dash olive oil

    1 dash white wine

    1 dash cream

    fresh ground black pepper

Add olive oil to a saucepan and gently sauté the oysters and mushrooms until the mushrooms are tender. Drain excess oil and add the bacon, wine, cream and pepper. Stirring, bring to the boil, immediately remove from heat and allow to cool completely.

    Make the 8 thin patties.
Spoon about a tablespoon of filling onto the centre of 4 of the patties and spread slightly leaving the outer edges clear. We need the top half to bind here.
Cover with the remaining patties and seal the edges by pressing down on the outer perimeter with your fingers (like you would with a pie). Don’t apply pressure to the centre of the patty or the filling will squirt out. Place the patties in the refrigerator until they are cold.

    Warm the remaining filling.

Cook the patties as you normally would but taking extra care when turning. You can find extensive patty making and cooking instructions in the links in the Basic Hamburger recipe.

Split the rolls and toast the cut surfaces lightly (under grill, on barbecue or in a pan) just before the patties are done. Spread mayonnaise on the bottom half, add a thin slice of onion, some lettuce and a slice of tomato. Now add the patty and spoon the remaining filling over the patty. Top off with the other half of the roll. Enjoy a great tasting Carpetbagger Burger.

Next, fry up some bacon strips and place three or four (depending on how big your patty is) bacon strips on top of the slice of provolone cheese. Next, put some mushrooms on top of the bacon strips. Then, add a slice of mild cheddar cheese. Then, place the other patty on top and seal any exposed ingredients with more ground beef. (may need to take the top off of the slow cooker for about an hour at the end so it doesn’t get soupy, but soupy is better if you want to pour over spaghetti)

Then put whole sausage on bomber bun and scoop out some sauce and onions and pile on top. OR (for the picky kids) just scoop out sauce and pour over noodles.

    MMMMMM….I’m hungry now.

  464. My husband is a big time hunter so we always have fresh venison avaibable. Venison can be tough and dry when made into hamburger. So we make bacon burgers out of it. We grind the venison using a ratio of 1/3 pork to 2/3 venison then we add bacon to the mix to flavor it. Through in some garlic powder and cajun seasoning in addition to worchestire sauce then grind finely. Form into patties and through on the grill. Set the charcoals to one side, then brown the patties over the direct heat for a minute or two on each side then move them to the low heat side.
