After we ate at Salumi, it was hard to buy any other cured pork for a bit. I mean, what can compare to this lunch?
However, not having the best doesn’t preclude having the rest. Especially when the sun is shining in a spring-like fashion, the greens you bought from the farmers’ market are actually vivid green, and the entire house is chanting its hunger.
Time for chopped salad. Time to pull out the salami.

I have to say it is difficult to play favorites with so many beautiful options within reach these days. If I must choose today…let’s call it Columbus. If for no other reason (such as they label for gluten free), than simply that their Finocchiona is my current favorite salami. Ever. Schmeared with fresh chevre, cradled in a belgian endive leaf and topped with a petite dollop of homemade apple sauce—oh! *sigh*
